Squash Patties

Ingredients:

  Amount  Measure       Ingredient -- Preparation Method

   2      medium        yellow squash
     1/2                stack saltine crackers
     1/2                onion
     1/2                bell pepper
   1                    hot pepper if desired
   1                    egg
                        creole seasoning to taste
 

Preparation:

Cook squash until tender. Drain and mash with fork. Add other ingredients and make into patties. If not thick enough, add a few more crushed crackers. Roll in crushed cracker crumbs, and fry in deep fat until brown.
