Summer Squash Mix

Ingredients:

   2      pounds        mixed squash -- yellow crookneck,
                        -- zucchini,
                        scallop squash
   4      tablespoons   butter
   3                    green onions -- sliced
     1/4  cup           celery -- diced
   1      teaspoon      salt
     1/8  teaspoon      pepper
   2      tablespoons   water
 

Preparation:

Scrub squash. Cut crookneck into 1/2" cubes; zucchini into 1/4 " diagonal slices; scallop into wedges of comparable thivkness. Melt butter insaucepan. Add onions and celery and saute 3 minutes. Add squash, salt, pepper and water. Cover and bring to boil quickly,. Reduce heat until tender, shaking the pan frequently.
