artichoke balls
 

Ingredients:

  1       can           artichoke hearts              
  2       cup           seasoned bread crumbs
  2       Tablespoon    or more if needed olive oil
  5       lbs           boiled and peeled crawfish or shrimp*
  1       Tablespoon    Parmesean cheese
  2       Tablespoon    lemon juice
  1       Teaspoon      minced garlic
  1       lb.           crawfish tails or shrimp
 

Preparation:

Preheat oven 350^ Place all ingrediants in food processor except seafood and one cup of bread crumbs. Process until combined. Mixture should be moist. Add chopped seafood and form into 1" balls. Roll into remaining bread crumbs. Bake until hot. Serve with tomb-mato sauce
