Hot Artichoke Dip

Ingredients:

                        tortilla chip strips (for dipping) 
                        crudités (vegetables for dipping: carrots, celery, 
                                  cauliflower, broccoli, etc.) 
14        ounces        marinated artichoke hearts 
4         ounces        mild green chiles 
2         ounces        chopped pimentos 
1         jar           La Victoria salsa (or equivalent) 
                        cilantro 
1/2       cup           grated Jack or cheddar cheese 
2         tablespoons   mayonnaise (optional) 
2         tablespoons   sour cream (optional)
 

Preparation:

Drain and chop Artichoke hearts, mild green chiles and pimentos. Combine above ingredients in a large bowl. Add salsa to taste, add mayonnaise and sour cream. Place in a small casserole dish or quiche dish. Top with grated cheese and microwave covered 4 to 6 minutes until bubbly. Garnish with sour cream, cilantro and olives. Serve with tortilla strips and crudités or fill cooked artichokes with hot dip.
