Lemon Tofu Cheesecake

Ingredients:

1         Tbsp.         lemon juice 
2         Tbsp.         cornstarch, dissolved in 2 Tbsp. water 
1         lb.           firm, silken tofu 
1         tsp.          vanilla 
1/3       cup           sugar 
1/2       tsp.          lemon zest 
1         Tbsp.         tahini 
1/2       tsp.          almond extract 
1/2       tsp.          salt
 

Preparation:

Blend all ingredients in blender until very smooth. Pour into pie crust of your choice. Bake at 350° for 30 minutes. Cook and serve with a fruit topping.
