Preparation:
heat oil in a large skillet, over a moderate flame add onions, potatoes, apples, and celery root heat and stir for 6-8 minutes, until onions are well softened add the chicken stock-stir bring to a boil, reduce heat, and simmer for 30-40 minutes until the potatoes, apples, and celery root are tender strain out the vegetables and puree in a food processor return pureed vegetables to the liquid season to taste with salt and white pepper ladle into individual bowls garnish with snipped chives serve hot |
