Red, White and Green Salsa

Serves: 3 Cups
 

Ingredients:

2         cups          chopped seeded watermelon
1         cup           chopped peeled jicama
1         medium        stalk celery, sliced (1/2 cup)
1/4       cup           chopped fresh cilantro or parsley
2         tablespoons   chopped jalapeno or serrano chilies
2         tablespoons   white vinegar
1/4       teaspoon      salt
 

Preparation:

1. Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 1 hour to blend flavors but no longer than 2 days. 2. Stir salsa before serving.
