Taquitos with Queso Fresco and Pico de Gallo Salsa

Ingredients:

                        *** Pico de Gallo Salsa***
   8                    Roma tomatoes -- diced
   1                    yellow onion -- diced
   1 1/2  cups          cilantro -- chopped
   1                    serrano pepper -- diced
   2      tablespoons   garlic -- minced
     1/4  cup           lime juice
   5      tablespoons   olive oil
                        salt and pepper -- to taste
                        ***Taquitos***
  12      ounces        Cacique brand Queso Fresco
                        corn tortillas
 

Preparation:

Pico de Gallo Salsa: Mix all ingredients. Let stand for a few minutes for flavors to blend. Taquitos: Cut cheese in strips and fill tortillas. Wrap and close and top with the Pico de Gallo.
