Sweet-Hot Salsa

Serves: 1 3/4 cups
 

Ingredients:

1         medium        papaya, peeled, seeded and chopped (1 1/2 cups)
1         small         cucumber, peeled and chopped (1 cup)
1         small         carrot, shredded (1/3 cup)
1         small         jalapeno chili, seeded and finely chopped
1         tablespoon    lime juice
1         tablespoon    white vinegar
1/2       teaspoon      sugar
1/4       teaspoon      salt
 

Preparation:

1. Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 4 hours to blend flavors, but no longer that 2 days. 2. Stir salsa before serving.
