Tofu Veggie Kabobs

tofu and an array of vegetables marinated in soy sauce,grilled and served with peanut sauce.
 

Ingredients:

1/2       pound         Tofu
2         medium        Carrots(cubed boiled)
16-20                   Pearl onions
16                      Baby tomatoes
8                       Button mushrooms
1         medium        Zucchini(cubed)
8         medium        Baby potatoes
20        cubes         Pineapple
Marinade:
2         Tablespoon    oil
1/2       cup           soya sauce
1         Tablespoon    ginger
1         Clove         garlic minced
1/2-1     teaspoon      chili paste
salt and pepper
Peanut sauce:
3         Tablespoon    soya sauce/teriyaki
2         Tablespoon    crunchy peanut butter
                        a little vinegar
1         Clove         minced garlic
 

Preparation:

Kabobs:Mix all the ingredients of the marinade and toss the vegetables and tofu in it.Adjust seasoning.Let sit for an hour or two.If using bamboo skewers,soak in warm water for a while.Skewer the vegetable pieces and tofu,brush with the marinade from time to time and grill till they are browned on all sides.Can be done in the oven broiler too.Once they come out,season with salt and pepper.Serve hot over a bed of jasmine/basmati rice.Pour peanut sauce over the kabobs. Peanut sauce:Heat all ingredients over medium heat in a sauce pan,stirring constantly till thick.
