Poached Salmon and Greens with Lemon Mustard Dressing

Ingredients:

     1/4           cup  grey poupon dijon mustard
  1         tablespoon  lemon juice
     1/4           cup  dairy sour cream
     1/4           cup  vegetable oil
  1 1/2      teaspoons  chopped fresh dill -- or
     1/2      teaspoon  dried dill weed
  8               cups  torn mixed salad greens -- about 10oz pkg
  8             ounces  fresh salmon fillets -- poached,skinned and
                        flaked
 

Preparation:

For dressing, in small bowl combine mustard and lemon juice. Slowly stir in sour cream and oil. Stir in dill. Cover; refrigerate until serving time. To serve, on large serving platter, arrange salad greens and salmon. Drizzle salad with dressing.
