Preparation:
In a medium skillet, melt butter. Add vinegar, red and green peppers, shallots or onions and salt and pepper. Stir until butter melts and vegetables soften slightly, about 2 minutes. Remove from heat. Cut salmon into 4 pieces. Put in a shallow baking dish and pour butter sauce over. Cover with plastic wrap and refrigerate 45 minutes. Preheat oven to 400 degrees. Bake uncovered 5 to 9 minutes or until salmon is cooked through when cut into. Serve immediately.
