Salmon Loaf

Ingredients:

                        nonstick vegetable cooking spray
   1      can           salmon -- undrained (15
                        -- 1/2-oz)
   2                    eggs -- beaten
   2      cups          soft bread cubes -- or 1/3 cup bread
                        -- crumbs
   2      tablespoons   fresh chopped parsley
     1/8  teaspoon      pepper
   1      small         onion -- chopped
   2      tablespoons   lemon juice
 

Preparation:

Preheat oven to 350 degrees. Generously spray an 8and1/2- by 2and1/2-inch loaf pan with vegetable spray. In a large bowl, flake salmon, removing bones and skin. Add all remaining ingredients and mix well. Press into loaf pan. Bake for 50 to 60 minutes or until golden brown and toothpick comes out clean. Let stand 5 minutes. Loosen edges and lift out of pan onto serving platter. Cut into 4 slices. 4 servings/Serving size:
