Pear Corned Beef Slaw

Ingredients:

  2                     bartlett pears -- cored and diced
  6               cups  cabbage -- shredded
  1                can  corned beef -- (12 ounces), cubed
  1                cup  swiss cheese -- cubed
     1/4           cup  onion -- chopped
     3/4           cup  low fat mayonnaise
  1         tablespoon  vinegar
  2          teaspoons  prepared mustard
  2          teaspoons  sugar
  1           teaspoon  prepared horseradish
  1           teaspoon  celery seed
                        lettuce
                        pear slices and parsley for garnish
 

Preparation:

Toss together pears, cabbage, corned beef, Swiss cheese and onion. Blend remaining ingredients except lettuce and garnish. Add to salad and toss gently. Refrigerate until chilled. Serve in lettuce-lined bowl. Garnish with additional pear slices and parsley.
