Smoked Ducks

Ingredients:

   1      cup           white wine - dry
   1                    onion - whole
   1                    apple - halved
   1                    turnip - halved
   1      tablespoon    liquid smoke
   1      teaspoon      mint - dried -- crushed
   1      tablespoon    parsley - chopped
   6      drops         Paychaud's bitters -- (or 3 drops
                        -- angostura bitters)
   1      tablespoon    Worcestershire sauce Worcestershire sauce
 

Preparation:

Clean ducks well, leaving the skin on them. Prepare smoker cooker with the seasonings above in the water pan. Put an apple or turnip or onion or all of these inside the ducks. Salt and pepper well inside and out. Put in smoker, being very careful not to overcook. Cook until internal temperature of deepest part of breast reaches 170F.
