Ingredients:

  13                    dried red chili peppers -- - soaked, seeded &

   2      tablespoons   shallots -=or=- red onion
   1      tablespoon    garlic -- chopped
   1      tablespoon    galanga (gingerroot)
   3      tablespoons   kaffir lime leaves*
   1      tablespoon    lemon rind -- grated
   1 1/2  tablespoons   lemon grass -- chopped
   1      teaspoon      ginger -- chopped
 

Preparation:

* substitute lime zest Soak all dried ingredients until sufficiently soft. Place all ingredients in a blender or food processor and blend to form a smooth paste.
