Tuna With Papaya Salsa

Ingredients:

  1                cup  tomato concasse
     1/2           cup  cilantro
     1/2           cup  green bell pepper
     1/2           cup  yellow bell pepper
     1/2           cup  red bell pepper
  2        tablespoons  fresh lime juice
  1         tablespoon  olive oil
     1/4      teaspoon  liquid hot pepper sauce
  4                     tuna steak
     1/4           cup  olive oil
  8                     scallions
                        cilantro
 

Preparation:

Combine papaya, tomato concasse, cilantro, bell peppers, lime juice, and 1 tablespoon olive oil-mix well season to taste with hot pepper sauce cover and chill for 1-24 hours brush tuna steaks with olive oil season with salt and pepper grill for 3 minutes per side, until just done (don't overcook) remove to heated plates grill scallions for 1 minute, until just wilted place two scallions atop each steak spoon salsa over scallions garnish with cilantro serve h
