Ingredients:

16 ounces kidney beans, rinsed and drained
8 ounces whole kernel corn, drained
1/4 cup chopped red bell pepper
3/4 cup thick-and-chunky salsa
1 tablespoon chopped fresh cilantro or parsley
4 flour tortillas (8 to 10 inches in diameter)
1/2 cup shredded Cheddar cheese (2 ounces) |
Preparation:
1. Mix beans, corn, bell pepper, salsa and cilantro.
2. Spread about 3/4 cup of the bean mixture over each tortillas to within 1 inch of the edge. Sprinkle 2 tablespoons cheese over each tortilla.
3. Fold opposite sides of each tortillas over filling (sides will not met in center.) Roll up tortilla, beginning at one of the open ends. Place wraps, seam sides down, in 9-inch square microwavable dish or dinner plate.
4. Microwave uncovered of High 1 minute; rotate dish 1/4 turn. Microwave 1 minute to 1 minute 30 seconds longer or until hot. |
