Preparation:
place rice in a large bowl, cover with cold water, drain repeat until water runs clear transfer rice to a saucepan add 4 cups water and kombu cover and bring to a boil, over high heat boil on high for 2 minutes reduce heat to medium and boil for 5 minutes reduce heat to low and simmer for 15 minutes, until all liquid is absorbed remove from heat remove cover, place a towel on top of pot, and replace cover allow to rest for 15 minutes meanwhile, combine rice vinegar, sugar, and salt in a small saucepan, over a low flame heat and stir to completely dissolve salt and sugar add additional salt to taste reheat to dissolve salt cool to room temperature spoon rice onto a large baking pan pour dressing over all-stir to mix quickly fan until completely cooled and glossy cover with a damp towel, do not chill |
