Blueberry-Lemon Muffins

Ingredients:

   1 3/4  cups          flour
     1/4  cup           plus
   2      tablespoons   sugar
   2 1/2  teaspoons     baking powder
     3/4  teaspoon      salt
   1                    egg -- well-beaten
     3/4  cup           milk
     1/3  cup           cooking oil
   1      cup           blueberries, frozen or fresh -- thawed and drained
   1      teaspoon      lemon peel -- grated
 

Preparation:

Stir together flour, sugar, salt and baking powder; make well in center. Combine egg, milk, and oil; add all at once to dry mixture. Stir just till moistened. Fold blueberries and lemon peel into batter. Fill will-greased muffin pans or paper bake cup lined muffin pans 2/3 full. Bake at 400° for 20 to 25 minutes. While muffins are warm, dip tops in melted butter and then in sugar.
