Gingered Shrimp Salad

Ingredients:

   1 1/2  pounds        shrimp -- cooked
     1/4  cup           vinegar -- white wine
   1      tablespoon    lemon juice
   1      teaspoon      sugar
   2      cups          celery
     3/4  cup           oil
   2      tablespoons   water
   1 1/2  teaspoons     ginger
     1/2  teaspoon      salt
   2      cups          carrot
 

Preparation:

Mix together all ingredients except shrimp and vegetables. Pour half over shrimp and half over the vegetables. Marinate for an hour, drain and serve over lettuce or sprouts.
