Preparation:
In a medium bowl, mix the tuna, water chestnuts, scallions, carrots, mayonnaise, relish, mustard, salt, and pepper.
In a flash: Buy carrots that are already grated or shredded and scallions that are chopped in the salad-bar section of the market. Also, if serving as a salad, buy a package of ready to serve greens.
