Peas 'n' Salmon Loaf

Ingredients:

   2      cans          salmon -- drained(15. 5oz ea)
   2                    eggs -- beaten
   1      tablespoon    onion -- chopped
   2      teaspoons     lemon juice
     1/2  teaspoon      salt
     1/2  cup           cracker crumbs -- fine
   1      can           peas -- drained(8.5 oz)
     1/4  cup           tomato catsup
 

Preparation:

1. Combine in a mixing bowl salmon, eggs, onion, lemon juice, salt and cracker crumbs. 2. Carefully fold in peas. 3. Pack into a greased 1 1/2-quart loaf pan; bake in a preheated 350F oven 30 minutes. 4. Spread loaf with catsup; bake 5 minutes longer.
