Escalloped Salmon

Ingredients:

   1      can           salmon -- (1 lb.)
   1      cup           bread or cracker crumbs
                        salt and pepper to taste
   3      tablespoons   butter
   3      tablespoons   flour
   2 1/2  cups          milk
 

Preparation:

Drain salmon; reserve juice. Melt butter, add flour, stirring until smooth. Add milk, stir until thickened, add salmon liquor. Season to taste. Flake salmon, add to sauce and place in greased baking dish. Sprinkle with bread crumbs. Bake at 350F for about. 20 minutes.
