Lime-Ginger Vinaigrette

Ingredients:

   3      tablespoons   juice from one lime
   1 1/2  teaspoons     minced or grated ginger
   1      teaspoon      dried coriander seeds
                        -- crushed
     1/4  teaspoon      crushed red pepper flakes
   1      tablespoon    Vietnamese fish sauce
                        -- (nuoc mam)
   1      tablespoon    chopped fresh basil
   1      tablespoon    chopped fresh cilantro
     1/3  cup           canola oil
                        salt and ground black pepper
 

Preparation:

Mix first 3 ingredients in small bowl; let stand for 15 minutes. Whisk in next 4 ingredients, then the oil. Season to taste with sale and pepper. Let stand for 1 hour before serving. Use for a fish marinade or a salad dressing.
