Lamb Chops In Tomato Sauce

Ingredients:

  8                rib  lamb chops -- {about 1 1/2 lb.}
  1         tablespoon  olive oil
  1                can  condensed cream of onion soup -- {10 3/4 oz.}
  1                cup  canned tomatoes -- chopped
  2              large  garlic cloves -- minced
  1              small  bay leaf
     1/8      teaspoon  paprika
     1/8      teaspoon  thyme leaves -- crushed
     1/4         pound  pepperoni -- sliced {about 1cup}
                        lemon slices -- {for garnish}
 

Preparation:

1. Brown lamb chops in oil in ovenproof skillet; pour off fat. 2. Blend in soup, tomatoes, garlic, bay leaf, paprika and thyme. 3. Cover and bake in preheated 350 F. oven 25 minutes; add pepperoni and bake 10 minutes longer, or until done. 4. Remove bay leaf; garnish with lemon slices.
