Preparation:
1. Place lamb in bowl of food processor. Add juice, onion, egg and spinach. Process until well blended.
2. Heat oil in saute pan over medium heat and add thyme, stirring a few seconds. Add yellow and green peppers to pan. Saute 2 minutes until softened.
3. Remove lamb from processor bowl and form into patties. Place in pan with peppers and cook on each side until crusty and golden brown. Season to taste with salt and black pepper.
4. Serve patties and peppers with lemon wedges. |
