Preparation:
Press thawed hash browns between paper towels to remove moisture. Press hash brown potatoes into oblong baking dish (12X6-inch size), sprayed with Pam or olive oil, forming a solid crust. Brush potatoes with melted butter.
Bake at 425 degrees for 30 minutes. Remove from oven. Sprinkle shredded cheese over potatoes.
You can add ham, sausage, or vegetables at this time if you like. Beat together eggs and milk, and season to taste. Pour this over the cheese, and baked uncovered at 350 degrees for 30 to 40 minutes. Slice and serve tomato and salsa on the side. |
