Garlic-Cheese Mostaccioli

Ingredients:

  12      ounces        mostaccioli
  20      cloves        garlic -- minced
   1      large         yellow onion -- minced
   4      tablespoons   butter
                        freshly ground black pepper
   1 1/2  pounds        colby cheese -- grated
     1/2  cup           dry white wine
     1/4  pound         mozzarella cheese -- grated
     1/4  cup           fresh parsley -- chopped
 

Preparation:

Prepare mostaccioli according to package directions, using a little olive oil in the water. Drain. Keep warm in a shallow ovenproof baking dish. Sauté‚garlic and onion in 2 tablespoons butter. Add pepper and set aside. Melt remaining 2 tablespoons of butter in top of double boiler, add grated Colby cheese and stir in wine. When cheese had melted, combine with garlic-onion mixture and pour over mostaccioli. Sprinkle grated Mozzarella and parsely over; place on middle shelf of oven and broil for 1 to 2 minutes. Makes 10 servings.
