Brazos Cafe Mango Chili Relish

Ingredients:

  1              large  lime -- juice of
  3                     ripe mangos -- peeled & diced
  8                     ripe peaches -- blanched peeled &
                        -- diced
     1/4      teaspoon  coriander
  5                     serrano peppers -- stemmed & diced
     1/4      teaspoon  ground allspice
  1              bunch  green onions & tops -- finely chopped
  1         tablespoon  fresh mint -- chopped
  2             cloves  garlic -- finely diced
  3        tablespoons  fresh cilantro -- chopped
  1         tablespoon  fresh chives -- chopped
                        salt & white pepper -- to taste
  1 1/2         ounces  tequila -- optional
 

Preparation:

Cover fruits with juice. Separately, mix well rest of ingredients; gently toss into fruit. Adjust salt and pepper to taste; add more lime juice if desired. Cover; refrigerate at least an hour before serving. Wonderful accompaniment to grilled meats.
