Ingredients:

  2                 c.  Fresh or frozen corn kernals    cooked &
                        drained
     1/3            c.  Chopped zucchini
     1/4            c.  Chopped sweet red pepper
  2              Tbsp.  Chopped red onion
                        Parsley Dressing:
  2              Tbsp.  Cider vinegar
  1              Tbsp.  Vegetable oil
  1              Tbsp.  Finely chopped parsley
  1 1/2           tsp.  Sugar
     1/4          tsp.  Salt
     1/4          tsp.  Chili powder
     1/4          tsp.  Freshly ground pepper
 

Preparation:

Combine corn, zucchini, red pepper and red onion in medium bowl. To make dressing, whisk ingredients together in a small bowl. Add the dressing to the corn mixture. Toss to blend. Chill until serving time, at least two hours. To serve, drain salad. Place lettuce leaves on a plate and topwith a dollop of salad.
