   5      pounds        coarse ground pork butt
   1 1/3  tablespoons   salt
   1 1/3  tablespoons   ground coriander
   2      teaspoons     cayanne pepper -- crushed
   1      tablespoon    black pepper -- course ground
   5      cloves        pressed garlic
   2      tablespoons   paprika
   1      cup           cold water
 

Preparation:

Combine all ingredients, mix well and stuff into hog casing or make patties.
