Ingredients:

  1                cup  green bell pepper
  1                cup  red bell pepper
  1                cup  sweet onion
  1                cup  tomato concasse
  1                cup  distilled white vinegar
     3/4           cup  sugar
  1           teaspoon  celery seed
  1           teaspoon  turmeric
     1/2      teaspoon  kosher salt
     1/2      teaspoon  mustard seed
     1/2      teaspoon  dried tarragon
 

Preparation:

Combine ingredients in a heavy saucepan, over a moderate flame bring to a boil and simmer for 30-35 minutes, until mixture thickens slightly, stirring often remove from heat and allow to cool cover and chill serve slightly chilled or at room temperature
