Rice-And-Lentil Pilaf

Ingredients:

                        vegetable cooking spray
     3/4  cup           chopped onion
     1/2  cup           chopped celery
     1/2  cup           sliced fresh mushrooms
   1      cup           water
     1/2  cup           uncooked lentils
     1/2  teaspoon      garlic powder
  16      ounces        one-third-less sodium chicken broth -- (1 can)
     2/3  cup           uncooked basmati rice
 

Preparation:

Coat a saucepan with cooking spray; place over medium heat until hot. Add onion and next 2 ingredients; sauté‚3 minutes or until tender. Add water and next 3 ingredients, and bring to a boil. Cook 2 minutes. Cover, reduce heat, and simmer 20 minutes. Add rice; simmer 20 minutes or until the rice is done and lentils are tender. Stir well. Yield: 4 servings (serving size: 1 cup).
