Spicy Noodle Salad

Ingredients:

  12      ounces        spaghetti
   2      tablespoons   sesame oil
   1 1/2  cups          carrots -- grated
   1 1/2  cups          bean sprouts
   4                    green onions -- chopped
   1      tablespoon    orange rind -- grated
     1/4  cup           orange juice
     1/4  cup           tahini [optl]
   3      tablespoons   soy sauce
   1      teaspoon      granulated sugar
   1      teaspoon      hot pepper sauce
     1/2  cup           peanuts -- chopped
     1/4  cup           fresh coriander -- chopped
 

Preparation:

In large pot of boiling salted water, cook spaghetti for 8-10 minutes or until tender but firm; drain and rinse under cold water. Drain well and transfer to bowl; toss with sesame oil. Add carrots, bean sprouts, onions and orange rind. Combine orange juice, tahini, soy sauce, sugar and hot pepper sauce; toss with spaghetti mixture. Sprinkle with peanuts and coriander.
