Spinach Lasagna - 2

  16      ounces        cottage cheese
     1/2  cup           grated parmesan cheese
   1      box           -- (10oz) frozen
                        -- chopped spinach,
                        -- thawed and drained
   9                    lasagna noodles -- uncooked
  28      ounces        spaghetti sauce
   3      cups          -- (12oz) mozzarella
                        -- cheese, shredded
 

Preparation:

Preheat the oven to 350F. In a medium-sized bowl, combine the cottage cheese, Parmesan cheese, and spinach; set aside. Place 3 noodles in a greased 7"x11" baking dish; cover with one-third of the sauce, then one-third of the cottage cheese mixture and one-third of the mozzarella cheese. Repeat the layers 2 more times, ending with mozzarella cheese, then tightly cover the dish with aluminum foil. Bake for 1 hour, then let stand for 15 minutes before cutting and serving. Yield: 6 servings
