Ingredients:

   1                    eggplant
     1/2  teaspoon      salt
     1/4  teaspoon      pepper
   2      tablespoons   olive oil
   2      tablespoons   lemon juice
   2      tablespoons   finely chopped scallion
   2      tablespoons   finely chopped parsley
   1                    garlic clove -- finely chopped
 

Preparation:
