Preparation:
In buttered baking dish, combine potatoes, water, consommé, salt, pepper, 2 tablespoons parsley, and butter. Cover with aluminum foil.
Bake at 400F for 1 hour, or until potatoes are tender and liquid is reduced to approximately half of the original volume.
Sprinkle with remaining parsley. Serve hot.
