Nancy Style Lobster Noodles

Ingredients:

   1                    round         noodles
   1      whole         lobster -- (alive)
   2      inches        sliced ginger
   3      cloves        garlic -- sliced
   2      teaspoons     wine
   1      tablespoon    oyster sauce
   1      whole         chile paste
   1 1/2  tablespoons   oil
   1      tablespoon    sugar
   8      ounces        stock
 

Preparation:

Soak the noodles in boiling water for 1 minutes. Drain in a colander and rinse well with cold water. Squeeze out excess water. Clean the lobster and cut into pieces. Slice the ginger and garlic. Put the oil on a high heat and add the garlic and ginger. Add the lobster and give a good stir then add stock. Cook for 10 minutes and remove to a plate. Leave the gravy in the wok and add the remaining ingredients. Stir for 5 minutes and put back the lobster and noodles. Stir well then remove to a plate. Serve hot.
