Preparation:
Place apples in large non-aluminum pot. Add cider and bring to a boil; cover and reduce heat to simmer for about 25 minutes or till soft enough to mash. Stirring occasionally with non-aluminum utensils. Remove from heat, mash using the back of a wooden spoon, push through a sieve into a mixing bowl. Or puree in a blender or food processor before pushing through the sieve.
Preheat oven to 275 degrees. Measure apples as you put them into a large shallow baking pan, and for every cup of apples you end up with, add 1/4 cup each of the granulated sugar and the brown sugar. Stir in the lemon juice and spices. Spread out evenly in the pan; bake, stirring occasionally for about 2 hours or until a heaping spoonful holds it shape when turned upside down. Pack in jars and cool to room temperature, cover and keep refrigerated.
