Shrimp Dumplings - Northern Style

Ingredients:

     1/2  pound         shrimp -- minced
     1/4  cup           Shao Hsing wine -- (or sherry)
     1/2  pound         bean sprouts or
     1/2  pound         Chinese cabbage -- (or combo),
                        -- shredded
  12                    green onions -- finely chopped
   2      tablespoons   ginger root -- finely chopped
 

Preparation:

Mix all ingredients and let stand in refrigerator at least 2 hours. Make dough using the Dim Sum Dumpling Dough (Boiling Water Method) recipe. Or buy dumpling or wan ton skins. Place about 1 teaspoon of filling in the center of each dumpling. Fold up so the top is uncovered. Steam for 10-12 minutes. Serve with your favorite dipping sauce.
