Ingredients:

   2      tablespoons   oil
  10      ounces        beef
   1 1/2  tablespoons   oyster sauce
     1/2  teaspoon      pepper
   1      teaspoon      cornstarch
   1 1/2  tablespoons   soy sauce
   2                    spring onions
   2      inch          root ginger
   2      stalks        coriander
   2      tablespoons   brandy
   1      dash          white wine
   2      tablespoons   stock
 

Preparation:

Heat a sturdy plate or oven-proof dish. Slice the beef thinly and season with cornstarch, pepper, soy sauce, oyster sauce and brandy. Mix well. Heat the oil in a wok until smoking. Add the beef and toss quickly, then add the wine and stock and stir well. Transfer to the hot plate and garnish with spring onion and coriander.
