Chicken and Sausage Gumbo 3

Ingredients:

     3/4            c.  all-purpose flour
  14               oz.  fat free turkey sausage (spicy) cut into
                        chunks
  18               oz.  skinless        boneless chicken
                        breasts, cubed
     1/2            c.  green bell peppers      chopped
     1/2            c.  celery  chopped
  1                 c.  onions  chopped
  2               qts.  hot water
  3             cloves  garlic  minced
  2                     bay leaves
  2               tsp.  Cajun seasoning
     1/2          tsp.  dried thyme
  1              Tbsp.  Worcestershire sauce
  1               tsp.  hot pepper sauce
     1/2            c.  green onions    chopped
  4                 c.  cooked rice
     1/4            c.  chicken broth
  1               tsp.  olive oil
 

Preparation:

Place flour in pan and bake for 15 minutes at 400 F until it is golden brown and the color of caramel, stirring every 5 minutes. Brown chicken in oil in Dutch oven. Add broth and saute the vegetables. Sprinkle in flour. Stir in water slowly. Add garlic and remaining ingredients except rice. Simmer one hour. Serve over rice. NOTE: The meat and oil can be eliminated. Saute vegetables in vegetable broth and add diced potatoes or ground TVP (reconstituted) to add some extra substance.
