Mast Va Khiar (Iranian Yogurt and Herbs)

Ingredients:

   1      large         cucumber -- shredded
     1/4  cup           minced red bell pepper or fresh pimento
   2                    green onions and tops -- minced
   1      tablespoon    minced fresh dill
                        or
   1      teaspoon      dried dill
   1      tablespoon    minced fresh cilantro
   1      teaspoon      sugar
   1      tablespoon    fresh lime juice
   1      cup           plain yogurt -- 8 ounces
                        dill or cilantro -- for garnish
 

Preparation:

Mix all the ingredients except the garnish together exceedingly well and put into the freezer. Stir every 10 minutes for 45 minutes to 1 hour. You do not want it frozen solid, just so it is beginning to get crystals in it.
