JC's Simple Chicken

Ingredients:

   1      3 pound       chicken -- (3 to 4)
   4      cloves        garlic
   1      whole         fresh coriander
                        groundnut oil for mop -- optional
 

Preparation:

Wash and dry chicken. Quarter the garlic cloves - don't bother to peel unless you wish to eat them later. Place the garlic and a loose wad of the coriander into the chicken. Smoke at 240-250F for about 3 hours (longer if you can keep the temperature down). Every half-hour or so, chuck some coriander onto the charcoal
