Lime Chicken Shish Kabob

Ingredients:

   2                    chicken breasts -- cut in
                        cubes
   2                    limes -- juice of
  20      milliliters   garlic -- minced
   1      tablespoon    low sodium soy sauce
   1      tablespoon    apple juice concentrate
   8      ounces        medium mushrooms
   1                    red bell pepper -- cut in 1"
                        cubes
  16                    white pearl onions
   1                    green bell pepper -- cut in 1"
                        -- pieces
   2      small         zucchini -- cubed
 

Preparation:

Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours, turning occasionally. Alternate chicken and vegetables on skewers.
