Southwestern Potato Salad

Ingredients:

   1      cup           good-quality prepared mayonnaise
                        (regular or reduced calorie)
     1/4  cup           Dijon mustard
   2      tablespoons   fresh lime juice
   1      medium        tomato -- chopped
   2      tablespoons   chopped cilantro
     1/2                jalapeno -- finely diced
   2                    scallions -- white and green
                        -- parts, chopped
     1/2  medium        red onion -- thinly sliced
     1/2  teaspoon      cayenne pepper
   1      small         garlic clove -- minced
                        salt -- to taste
                        freshly ground black pepper -- to taste
   2      pounds        cooked and drained new potatoes -- sliced 1/2 " thick
 

Preparation:
