Citrus And Cilantro Grilled Lake Trout

Ingredients:

                        zest and juice of 1 ea
                        - orange and lemon
   1      tablespoon    olive oil
   1      teaspoon      mustard
   4                    lake trout steaks
                        ***seasoned butter***
   2      ounces        butter
                        salt
                        garlic powder
                        black pepper
                        cilantro or parsley
                        - finely chopped
 

Preparation:

Grate the orange and lemon zest. Blend together the zest and juice, oil and mustard. Pour the marinade over the steaks in a shallow dish and marinade for 1 hour. Meanwhile blend the butter and seasonings. Place on a sheet of foil and roll up in a log. Chill until firm then cut into 8 rounds. Drain and grill the steaks 4-5 min per side over high heat, basting occasionally with the marinade. Serve with the cilantro butter rounds.
