Chipotle BBQ Sauce

Ingredients:

     1/2  medium        onion -- minced
   4      cloves        garlic -- minced
   1      tablespoon    bacon fat
  28      ounces        catsup
   8                    chipotles en adobo -- minced
   2      tablespoons   good chile powder
   2      teaspoons     cumin
   2      teaspoons     thyme
   6      ounces        amber beer
     1/2  cup           cider vinegar
   2      tablespoons   prepared mustard
   1      tablespoon    Worcestershire
   1      tablespoon    nuoc nam
     1/4  cup           bourbon
     1/2  tablespoon    cocoa
                        black pepper to taste
 

Preparation:

Sauté onions and garlic on med. high heat until soft. Add everything else. Simmer uncovered until thick. A bourbon based glaze might be nice. A little Worcestershire, a little brown sugar, a little bourbon. I prefer bourbon to whiskey. Evan Williams is a lot cheaper than JD. Picked up 1/2 gal for $13 in New Hampshire. Not bad for 7 yr. old sourmash. I put 1/4 cup in my basic red sauce and in Bad Attitude chili. Here's my latest version
