Amount Measure Ingredient -- Preparation Method

1/2 cup fresh pineapple -- medium dice
1/4 cup sliced red onion
1/2 jalapeno -- minced
1 1/2 teaspoons cilantro -- chopped
1 tablespoon rice wine vinegar
1 lime -- juiced
salt and pepper to taste
Preparation:
Use 1/3 of a whole fresh pineapple. Peel, core and slice 1/2". Grill until the sugars start to caramelize. Dice and add other ingredients.
Note: This salsa goes great with grilled chipotle pork tenderloins.
